I still think this is a mistake -- the owner of a name server should be able
to remove his server from any domain.

About the only thing you can do if a customer hijacks your name servers is to
redirect their domain to some place like http://www.RealDoll.com and hope it
offends them enough to either contact you, or change their name servers.

Only a user can change their name servers. You can email the
username/password to a user (to the Administrative Contact for the domain)
but viewing the domain in the Reseller Interface
(http://resellers.opensrs.net), there is a link at the bottom of the domain
view page.
