A fax is often asked for as it is a criminal offence to forge someone else's
signature - that will be held up in court. Whereas the law regarding forged
emails is something of a grey area.

Given that a lot of countries are changing their requirements as to what constitutes a legal document, would it soon be possible to send this information via email. Say as a locked pdf file for example. To me a signature on such an electronic document would be as binding as any faxed document.
I wouldn't trust faxed signatures any more than I would any other electronic transmission of such information. I really fail to see how having it faxed is any different to it being sent as an attachment to an email.
