Either way, how would you handle it in the real world, i.e. someone
purchases something from your retail store with a credit card and then
later charges back on you. What do you do?

Welcome to the real world of accepting credit cards as a merchant. The
merchant, no matter what the field, always takes a risk when accepting
credit cards. It's a cost of doing business.
